  • Inspiration – We can say with certainty that Green Chili Chicken Enchiladas is mainly inspired by the classic chicken enchiladas! Unlike the original tomato sauce, here we mostly used a sauce called salsa verde, which is a green sauce made of chili peppers and tomatillo. 
  • Popularity – If you love spicy food, then this particular recipe of green chili chicken enchiladas will surely become your new favorite. This super spicy and cheesy dish is extremely famous in and around New Mexico.

Ingredients For Green Chili Chicken Enchiladas

  • 8-10 Corn Tortillas 
  • 8 ounces of Cream Cheese 
  • 6-7 ounces of canned Green chilies, diced
  • 1 – 1½  tbsp. of lime juice
  • ¼ tsp. of salt
  • ½ tsp. of ground cumin
  • ½ tsp. of chili powder 
  • ½ cup of Cilantro, finely chopped 
  • Shredded Chicken, use 3 chicken breasts 
  • 1 cup of sour cream 
  • 12 to 14 ounces of Salsa Verde 
  • 2 to 2½ cup of Mozzarella cheese 

Easy Green Chili Chicken Enchiladas Recipe – Steps To Follow 

Step 1 

For this easy Green Chili Chicken Enchiladas recipe, let us first prepare the yummy chicken, cream cheese and green chili filling for our corn tortillas. In a medium-sized bowl, add the cold block of cream cheese. With the help of an electric hand-whisk, melt the cream cheese and whisk it thoroughly. 

Step 2

Now drop the diced green chilies into the cream cheese bowl. Further add lime juice, cumin powder, chili powder, chopped cilantro, salt and shredded chicken into the bowl. A quick tip here would be to drain out the liquid from the canned green chili tin. 

Step 3 

With the help of a spoon, mix everything together. We will use this chili chicken mixture later to fill in the corn tortillas, surely try it beforehand to check the seasonings. 

Step 4

Take another bowl and add the green salsa verde and sour cream. Whisk these two ingredients thoroughly until smooth. Here, we have used store-bought salsa verde, but if you want, you can surely make your own salsa verde at home. 

Step 5

Now, take out your casserole and firstly, with a spoon make a generous layer of green salsa verde and sour cream mixture. Next, prepare small rolls with the help of the corn tortillas, and try to shape them like an enchilada roll. Fill in the center of your tortillas with your prepared green chili chicken mixture. 

Step 6 

Last but not least, place the small rolls in your casserole and later on drizzle the rest of the salsa verde mix into the baking dish. Top it up with grated mozzarella cheese and then bake it in a preheated oven at 375 degrees for a total of 30 minutes. Serve these hot, yummy and easy green chili chicken enchiladas along with some soft drink on the side.
