Ingredient List 

  • 3-4 cups of cashews, soaked overnight with normal water
  • ¼-½ cup of water
  • 1 ½ – 2 cups of Vegan Sugar, you can adjust the level of sweetness according to your preference 
  • 4-5 tbsp. Cocoa Butter 
  • 4-5 tbsp. coconut oil
  • 1-1 ½ tsp. salt
  • 1-2 cups of Coconut milk 
  • 1-1 ½ tsp vanilla extract or vanilla essence 
  • 1 Vanilla Bean extract 

Making Vegan Icecream – A Complete Recipe Guide! 

  1. To start this yummy vegan icecream recipe, first, in a blender, make a fine paste out of the soaked cashews. Next, with the help of a strainer, strain the cashew milk! 
  2. For this particular vegan icecream, you need only a cup or a cup and a half of cashew milk. Now, heat up a pot and add water and vegan sugar. 
  3. When the sugar is properly melted, put cocoa butter into the pot. With the help of a whisk, mix all the ingredients. Lastly, add coconut oil and salt to the pot and whisk for a few more minutes. 
  1. Let this sugar mixture cool for a while and then in a blender start blending coconut milk and cashew milk. As the blending takes place, start pouring the sugar mixture into the blender. 
  2. Once you get a thick consistency, turn off the blender and transfer this ice cream mix into a big bowl. Add vanilla bean extract and vanilla essence to your prepared ice cream mixture and whisk it again.
  3. Now, let this ice cream mixture chill in the freezer for 1 to 2 hours. We suggest not to over freeze it because if the texture becomes rock hard, then you cannot put it in the ice cream churner. 
  1. After 1 to 2 hours, transfer your frozen ice cream mixture into the ice cream churner and let this churn for at least 1 hour. Lastly, put this in a tray and clean out the top layer with a spatula.
  2. To get the best results, let this ice cream be in the freezer for at least 8 to 10 hours.
