Fresh Vegetables:

Sauté The Veggies:

Take a nice big pot and heat it over medium-high heat. To make the recipe healthy add coconut or avocado oil to the pot and let it heat for a while. Once the oil is heated add the nicely diced veggies in the pot(bell peppers, onion, minced garlic) then sauté these veggies for 4-5 minutes on medium heat.

Cook Main Ingredients:

Add the boneless chicken with canned tomatoes, green chilies, all the spices, and chicken broth into the same pot. After some time add the lime juice to the pot and let it boil by reducing the flame to simmer. Let it cook for 15-20 minutes until the boneless chicken is fully cooked.

● Take the Chicken Out:

Once the soup is boiled and the chicken is cooked, take the chicken out and shred it with two folks on a plate. Again add the shredded chicken to the pot, and to add some more flavor add a handful of corn to the pot. Let the corn cook for about 2-3 minutes in simmer.
