Chicken Scampi Recipe Details – Follow It Step-By-Step
Step 1
To prepare Chicken Scampi, firstly, let us marinate our two chicken breast pieces. Add the pieces of chicken breast to a bowl, drizzle a bit of olive oil, add a bit of lemon zest, and minced garlic and lastly, season it with salt and pepper.
Step 2
Use your hands to properly rub the chicken breast with all the marinating ingredients. Cover up the bowl with a clean wrap and keep it aside for at least 20 to 30 minutes. Once you have marinated your chicken properly, move ahead to the cooking process.
Step 3
Use a grill pan, brush some olive oil and then sear those marinated chicken breasts until properly cooked and charred. Keep the flame medium to ensure that your chicken is not overcooked or undercooked. Once the chicken breasts are grilled evenly, take it out of the pan and then slice it up into small chunks.
Step 4
Next, in a pan, drizzle some olive oil and put in 4 tbsp of butter! Once the butter has melted away, add minced garlic, red pepper flakes and lemon juice into the pan. Sauté it for a while and later add the white wine! Stir it with a spatula and then let it reduce for a few minutes.
Step 5
Once the white wine has reduced a bit, stir it again with a spatula and then add the chicken pieces. During the process where you are reducing the white wine, keep the flame low, but after adding the chicken pieces, switch to medium! Last but not least, add the boiled spaghetti and chopped parsley to the pan!
Step 6
Mix everything until properly combined. Then serve your mouth-watering Chicken Scampi on a fancy plate and don’t forget to garnish it up with a generous amount of grated Parmesan cheese. Enjoy it all with a soft drink on the side.
