Beef Noodle Soup Taiwan – Ingredients List 

  • 2 Beef Shanks 
  • ¼ to ½ cup of vegetable oil
  • 2-3 bundles of thin flour noodles
  • 5-6 Scallions, cut into halves 
  • 4-5 Star anise 
  • 1-2 Cinnamon sticks
  • 1-2 Nutmeg
  • 2 tbsp. Coriander seeds 
  • 2 tbsp. Cumin seeds 
  • 2-4 Bay Leaves 
  • 2 Red Chillies, sliced 
  • 2 Dried Red Chilies
  • 2-4 Tomatoes, diced, you can also you tomato paste
  • 2-4 Ginger, thinly sliced 
  • 3-4 Onions, thinly sliced 
  • 6-8 garlic cloves, peeled
  • 2-4 tbsp. Dary Soy Sauce 
  • 2-3 tbsp. Light Soy Sauce 
  • 2-3 tbsp Shaoxing Rice Wine
  • 1-2 tsp. of Chinese five spice
  • Rock Sugar, you can also brown or regular sugar 
  • 3-4 tbsp. Spicy Chili Bean Paste 
  • 2-3 cups of Bokchoy 
  • 1 whole Apple, cut into halves (optional) 
  • Fresh Cilantro, finely chopped
  • Pickled mustard greens (optional)
  • Salt and White Pepper as per taste 

How To Make Taiwanese Beef Noodle Soup? Recipe Guide 

  1. To begin this noodle soup recipe, in a pot, add water and the beef shanks. Then, add 2-3 halved scallions, thinly sliced ginger and 2-star anise to the same pot. Let this simmer at low to medium flame for about 8 to 10 minutes.
  2. Now, for the next step, heat up the Chinese wok. Pour vegetable oil and add garlic, ginger, scallions, onions and sliced red chilies to the wok. Sauté it for a few minutes and then add the tomatoes. 
  3. Once, the tomatoes become soft, add rock sugar and spicy Chili bean paste. After giving it all a quick mix, pour in dark soy sauce, light Soy sauce and Shaoxing rice wine and let this simmer for 5-10 minutes. 
  1. Meanwhile, in another pan, start roasting the whole spices. For this step, add cumin seeds, coriander seeds, bay leaves, star anise, dried red chilies, nutmeg and cinnamon stick to the pan. 
  2. Once these spices are slightly roasted, turn off the heat. Now, in a pressure cooker, add the beef shanks, your prepped sauce base of the soup and the roasted spices.
  3. You can also tie up these roasted spices in a cloth bag and put it inside the pressure cooker. Top everything with beef stock and lastly season this up with Chinese five-spice powder, salt and white pepper. 
  1. If you like a hint of sweetness, then you can also add one apple to this beef noodle soup. Put the lid on and let this simmer for 2 to 3 hours. 
  2. Meanwhile, in another pot, boil some flour noodles and fresh bokchoy, and keep it aside. Now, once your soup is ready, take out the beef shanks and slice it down.
  3. In a soup bowl, start assembling this authentic Taiwanese Beef noodle soup. On a bed of boiled noodles, add the beef slices and bokchoy. 
  4. Top it up with a generous amount of beef soup. Lastly, garnish with some freshly chopped coriander and pickled mustard green and thus, your soup bowl is all ready to be consumed.
