Hearty and Spicy Kimchi Jjigae Recipe

If you have ever made a stew before in your life, then you will be very well aware of the fact that they do take up a lot of time to cook, however, that won’t be the case for this one. along with that, this  Kimchi Jjigae Recipe is an absolute must-have if you have a cold or during cold winter dinners, as it is just going to fill you up with a comforting happy feeling from inside. 

Ingredients

  • One whole pound of kimchi
  • 1/4th cup of kimchi brine
  • Half a pound of pork shoulder
  • Half a packet of tofu
  • 4 Green onions
  • 1 medium onion(sliced up)
  • One teaspoon of salt
  • 1 teaspoon sugar
  • One teaspoon of toasted sesame oil
  • Two cups of chicken stock(or beef)
  • Two teaspoons of Korean Chilli pepper flakes(gochugaru)
  • One tablespoon of Gochujang paste

Steps

1. The first step will be to take a medium-sized spot and in that, you will be adding in your kimchi along with your kimchi brine. Then you will be adding in your pork Shoulders(which have been thoroughly washed) along with the onion. Add in three green onions as well(which have been cut into medium-sized pieces. Finally, in the same pot, you will be adding in your salt sugar gochugaru, and gochujang.

2. The in that pot itself you will add in your chicken stock along with a bit of sesame oil and put the heat on medium. Covered up let it cook for about 10 to 15 minutes. After that finally, you will open the lip, lay in the slices of tofu, and then you will be covering it again and let it cook for about 15 minutes so that the tofu soaks in the flavors of the stew, which is simmering inside. 

3. Make sure before adding in the tofu, that you will be stirring the stew very well so that none of it sticks to the bottom of the pan or you will be getting a burnt taste with the food, which is absolutely not good in the case of stews. After it has cooked properly you will open the lid of the pot, add in your shocked spring onions, and remove it from the heat.

4. Now your Hearty and Spicy Kimchi Jjigae is completely ready to be served with rice which is the most basic way of serving a stew all over Asia.

 Along with that when it comes to the authentic Kimchi Jjigae Recipe, it doesn’t use chicken or beef broth, but it is actually made with anchovy stock. if you are up for making an anchovy stock, it is nothing quite difficult as you will be requiring anchovies, radishes, green onion roots, and some dried-up kelp. Put it in a saucepan, add in the water, and boil it for about 20 to 30 minutes, and after it is done just strain the stock and it is completely ready for use.
