Ingredients
- 1 Whole Egg
- ½ cup of Brown sugar
- ¾ cup of canned Coconut milk
- 1 Cup of Glutinous Rice flour
- 2-3 tbsp of Unsalted melted butter
- ¼ tsp. of Salt
- 1 tsp. of baking powder
- ½-1 tsp. of Vanilla essence or Vanilla Extract
- ½ tsp. Honey (optional)
- 2 tbsp of black and white sesame seeds
Steps To Make Mochi Muffins
Step 1
To begin this easy butter mochi muffins recipe, firstly, we will prepare a mochi muffin batter. In a bowl, crack in one egg, add brown sugar and whisk it thoroughly until the sugar melts.
Step 2
Next, in the same bowl, add vanilla essence, coconut milk, and honey and continue whisking until your muffin batter becomes smooth.
Step 3
Now, in the same bowl, put the measured quantity of rice flour and baking powder. Don’t forget to add a pinch of salt as well. We generally use salt in desserts to elevate the taste of the whole dish.
Step 4
With the help of a spatula, start folding your rice flour mix into the coconut milk batter. We are looking for a thick and smooth texture here.
Step 5
Spray some cooking oil or brush some butter in your muffin tray. This will ensure your muffins don’t stick to the tray. Now, take two scoops out of the muffin batter and pour it into each muffin mold.
Step 6
Sprinkle some black and white sesame seeds on top of your tasty muffins. Remember these butter mochi muffins will eventually rise in the oven due to baking, thus don’t put too much of the batter into the muffin tray.
Step 7
Preheat your oven to 350 degrees Celsius. Put your muffin tray into the oven and bake it for almost 50 minutes. Your mochi muffins should be golden and crispy from the outside, but extremely soft and moist from the inside.
Step 8
Once your butter mochi muffins are baked properly, take the muffin tray out of the oven and let it rest for about 5 to 7 minutes. Let it cool down for a while and then gently take out your mochi muffins out of the muffin tray.
