What Is Zuppa Toscana? A Short History Before Moving On With The Recipe 

● Zuppa Toscana means Tuscan soup and it originated from the Tuscany Region of Italy. It also means Bread Soup.

● This is a homemade Italian Soup made with a hearty amount of Bacon, Italian Sausage, Potatoes, and Kale. 

● Originally, poor people of Italy made this recipe with stale breads or leftover bread they got.

Ingredients:

● A finely diced medium size onion

● 4 to 5 cups of water

● 5 to 6 chopped medium Russet Potatoes

● 1 bundle of fresh Kale leaves

● 6 oz of chopped Bacon for Zuppa Toscana 

● 1 lb Hot Italian Sausage

● A cup of whipping cream

● A cup full of shredded Parmesan Cheese

● 1 teaspoon of Kosher Salt

● 10 minced large Garlic Cloves

● Freshly ground Black Pepper 

Zuppa Toscana Soup Recipe: A Step-by-step Guide For You

Step 1

At first, take a Dutch Oven or big pot for this purpose, it can be anywhere near 6 qt. Before we start, clean it thoroughly from the insides with a towel or Kitchen cloth dipped in hot warm water. You might find recipes who will tell you to use the oven. But for a better cooking experience, we will recommend you to use a large pot.

Step 2

Chop your bacons up accordingly in medium size slices for the Zuppa Toscana. Start to sauté the bacon slices into the big pot till they are starting to get brown or reddish on the sides. For 5 to 8 minutes, keep cooking the bacon slices and soon, they will start to turn brown in colour. Take a slotted spoon and carefully remove them from the pot first. 

Step 3

Remove all the Bacon slices from the pot and check for any extra grease. With a spoon, remove the excess amount of oil that’s there in there. Leave just 1 tablespoon oil. Take a medium size plate and line it up accordingly with paper towels. For best results, we will recommend you to slightly wet all of the paper towels before using.

Step 4

Put the cooked bacon of the Zuppa Toscana recipe into the paper towel lined plate. Next, you will have to start cooking the hot Italian Sausage with the oil that you left in the pan. If it gets too hot, please reduce the heat to a lower setting first. With a spatula, start breaking up the sausage and sauté them in the oil. After 5 minutes, they will be thoroughly cooked.

Step 5

When it happens, remove all of them to the plate lined with paper towels. On a chopping board, chop down onions to fine dices at first. As the oil starts to get heated enough in the pan, add the diced onions and sauté them. After 5 minutes, you will see them getting clear and a golden colour will appear. Add minced garlic cloves into it and cook for another minute.

Step 6

Now, add 6 cups of Broth and some water. Wait till the Zuppa Toscana mixture starts to boil. After it happens, keep the heat at a lower setting and let it simmer for some time. Start to dice potatoes with medium size in mind. Otherwise you can just slice the Russet Potatoes and add them inside the pot with the boiling water. Cook for some time now without putting on a lid.

Step 7

For the next 13 to 14 minutes, cook potatoes till you can cut them easily with a spoon. When it happens, please add the chopped Kale Leaves and the sausages you have already cooked before this. With a wooden spoon, give this a slight stir and wait till everything starts to boil.

Step 8

When it comes to a boil, stir in a cup of fresh cream to the boiling mixture and stir vigorously. Season it from above with Kosher Salt and Black Pepper and turn the heat off. Top this up with Bacon and Parmesan and the Zuppa Toscana recipe is ready to serve.
