- 1 medium butternut squash (peeled, seeded, and cubed)
- 1 tbsp olive oil
- 1 tsp honey or maple syrup (for sweetness)
- 1/2 tsp cinnamon (optional)
- Salt and pepper to taste
- 2 cups mixed greens (spinach, arugula, or baby kale)
- 1/4 cup crumbled feta cheese (optional)
- 1/4 cup roasted pumpkin seeds or pecans
- 1/2 red onion, thinly sliced
- 1/2 cup dried cranberries
- 2 tbsp balsamic vinaigrette (homemade or store-bought)

Steps to Prepare Roasted Butternut Squash Salad
Step 1: Prepare the Butternut Squash
- Bake in oven at 400°F (200°C).
- Peeled and chopped Butternut squash into cube form into small pieces.
- In a bowl, toss the squash with the olive oil, honey or maple syrup, cinnamon (optional), salt and pepper.
- Pour the seasoned butternut squash on a baking sheet that is coated with parchment paper.
Step 2: Roast the Squash
- Bake the squash in the preheated oven for 25-30 minutes flipping it over half through when the skin is crispy and the inside soft.
- After that, let it cool for about 5 to 10 minutes before you put it in the salad.
Step 3: Assemble the Salad
- To begin preparing the salad, put the mixed greens at the bottom and blend them properly.
- Add the roasted butternut squash, place thinly sliced red onions on top, sprinkle with crumbled feta cheese, scattered dried cranberries and lastly crushed pumpkin seeds or pecans.
Step 4: Add the Dressing
- Balsamic vinaigrette should be drizzled all over the salad. You can also add as much or as little dressing to your preference.
