● 4 to 5 teaspoons of Dashi (Japanese fish stock)

● 2/3 cup of Granulated White Sugar

● 260 ml of Mirin (Japanese sweet wine)

● 1/2 cup of Sake

● 1 tablespoons of Cornstarch

● 250 ml of Shoyu (Soy sauce)

● 40 ml of Mineral Water

Homemade Eel Sauce Recipe: A Step-by-step Guide Only For You

Step 1

At first, we need to gather the right amount of ingredients. The secret to preparing the perfect sauce lies in the measured quantity of different ingredients. With propose steps the sauce comes out to be in the perfect consistency as it is required. Take measuring instruments and assemble all the authentic Eel Sauce ingredients on the kitchen table. Use a weighing table if possible.

Step 2

Take a pot of medium size and clean it thoroughly. Pour in the mirin at first, along with the granulated white sugar. After that, take the pot and start the flame at a low heat. Step 3

Step 4

Afterward, once the mixture starts to boil, reduce the heat as soon as possible. Let it simmer for a solid 16 to 20 minutes at a lower flame.

Step 5

Take a seperate glass and pour fresh water into it. Include the cornstarch and mix it well with the water. This cornstarch slurry will thicken the consistency of the Eel Sauce without messing with the flavours. Once the sauce starts to boil again, pour in the slurry into the pan. You can take the help of a big spoon, too.

Step 6

After you have added cornstarch, the colour will change right in front of your eyes. Bubbles will also start to come out of it rapidly and soon, you will have to turn the heat off. Once you bring the pan down, let it cool for 15 to 20 minutes. You will notice the sauce have got much thicker than it was before. Finally, your Eel Sauce is ready to be enjoyed with Tempura Sushi rolls.
