Ingredients
- Vegetable oil for cooking
- 1 whole onion, chopped
- 1 pound Chicken Thigh
- 3-4 Garlic cloves, minced
- 1 tbsp of garlic paste
- 1 cup of Soy Sauce
- ½ cup of vinegar
- 3-4 Bay leaves
- 1-2 tbsp. of brown sugar
- 3-4 tbsp. of freshly ground black Peppercorns
- Green onion, thinly sliced
Chicken Adobo Filipino Style – Steps To The Recipe!
Step 1
To begin this delicious Chicken Adobo recipe, firstly, let your chicken thighs rest in the tempting Adobo marinade. In a bowl place the chicken thighs and marinade it with soy sauce, vinegar, garlic and bay leaves.
Step 2
Let the chicken thighs rest in the marinade for at least 20 minutes. You can also put small cuts in the chicken thighs. Remember the adobo marinade happens to be the very base of this whole Filipino dish.
Step 3
Now heat up a pan and drizzle some vegetable oil. Keep the flame between low to medium, and then sear the chicken thighs from both sides. Cook the chicken for a few minutes and then take it out of the pan and keep aside.
Step 4
Next, in the same pan, pour in a bit of vegetable oil and add the chopped onion and minced garlic cloves. Sauté for a while and later add the rest of the adobo marinade into the pan.
Step 5
Give everything a mix and then add about half a cup of water in the pan. Wait for a few seconds and then add the brown sugar and black peppercorns. Mix everything for a spatula and let it simmer for about 3 to 5 minutes.
Step 6
Now, place your beautifully seared and glazed chicken thighs back into the pan. At this point, you can put on the lid and let it simmer for about 25 to 30 minutes. Remember to open the lid every few minutes to ensure that your chicken is not burned.
Step 7
Flip the chicken thighs to the other side and wait for your adobo sauce to reduce. Once the chicken thighs are cooked thoroughly in the adobo sauce, turn off the heat and garnish with some freshly sliced green onions. Serve this along with some steamed rice and enjoy.
