Which Beef Is Your Stroganoff’s Perfect Partner?

If you are searching for the best beef for your stroganoff, then you must know that tender steak is critical for the results that you want to see in your beef stroganoff recipe. It works well with top sirloin, boneless ribeye steak, beef tenderloin, or filet mignon tips. 

Ingredients:

  • Sirloin steak, thinly sliced into strips
  • 2 Tbsp olive oil
  • 2 Tbsp unsalted butter
  • 1/2 medium onion, finely chopped
  • Brown mushrooms, thickly sliced
  • 1 garlic clove, minced
  • 1 Tbsp all-purpose flour
  • 1 cup beef broth
  • 3/4 cup heavy whipping cream
  • 1/4 cup sour cream
  • 1 Tbsp Worcestershire sauce
  • 1/2 tsp dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Directions

Step 1

Place a large deep pan or Dutch oven over medium-high heat. Add 2 tablespoons of olive oil and let it heat until very hot. Carefully add thinly sliced beef strips to the pan in a single layer. Sear for about 1 minute on each side without stirring. You want them nicely browned and just cooked through. If necessary, cook the beef in two batches to avoid overcrowding. Once done, transfer the beef to a plate and cover it to keep warm.

Step 2

In the same pan, add 2 tablespoons of unsalted butter, along with the chopped onion and sliced mushrooms. Sauté for about 6-8 minutes until the liquid has evaporated, and both the onions and mushrooms are soft and lightly browned. Stir in 1 minced garlic clove and cook for an additional minute until fragrant. 

Step 3

Sprinkle 1 tablespoon of all-purpose flour over the mushroom mixture. Stir and sauté for another minute, making sure the flour is evenly mixed in. Gradually pour in 1 cup of beef broth while scraping the bits off the bottom of the pan for added flavor. Then, add 3/4 cup of heavy whipping cream and let it simmer for 1-2 minutes, allowing the sauce to thicken slightly.

Step 4

In a separate bowl, take a few tablespoons of the sauce and stir it into 1/4 cup of sour cream. This prevents the sour cream from curdling when added to the hot pan. Slowly pour the tempered sour cream mixture into the pan while stirring continuously to ensure a smooth sauce.

Step 5

Stir in 1 tablespoon of Worcestershire sauce, 1/2 teaspoon of dijon mustard, and season with 1/2 teaspoon of salt and 1/4 teaspoon of pepper (taste and adjust if necessary). Let it simmer until the sauce is lusciously creamy.

Step 6

Add the cooked beef back into the pan along with any juices that may have accumulated on the plate. Stir gently and bring to a gentle simmer until the beef is heated through.
