Ingredients(for the Tamale)

Four cups of Masa Harina

Three cups of beef broth

Two teaspoons of baking powder

1 teaspoon salt

One teaspoon of cumin powder

One and a half cups of lard

8 ounces of packaged corn husks(available on Amazon)

Ingredients(for the filling)

One and a half pounds of pork loin

one large onion (chopped )

One bay leaf

One and half a teaspoons of dried oregano

6 to 7 cloves of garlic

Two teaspoons of Chile powder

2 teaspoons of cumin powder 

Half a teaspoon of black pepper

Four dried California chili pods

Two cups of pork broth

One teaspoon of onion powder

1 tablespoon of vegetable oil

One tablespoon of all-purpose flour

Steps

1. At first we will start making the filling, for which you will take a slow cooker, and in that, you will add in your pork, chopped onions, bay leaf, 2 to 3 cloves of garlic, half a teaspoon of oregano, 1 teaspoon of cumin, salt and pepper, and then slow cook it for about 8 hours. Strain the broth, and keep it aside and your pork is ready. 

2. Now we come to the sauce for which you will be removing the stems and the seeds of your California chili pods. Then you will take taking saucepan, add in 2 cups of broth, then your chili pods, and cook it for about 20 minutes over low heat. Then you will transfer the mixture to a blender, add in the rest of the ingredients for the filling(except the flour and salt), and blend it very well. 

3. Then you will heat a saucepan, add in your flour and salt, cook for one minute, and then add the blended mixture, cook it for about 10 minutes, then you can add the shredded pork and your pork chili filling is ready for the Tamale.

4. Now we will move on to making the Tamale, you will need to soak the corn husks in warm water for about 30 minutes. Then we will start preparing the dough, for which you will in a big ball take the lard along with two tablespoons of beef broth, and use a hand mixer, to mix it very well(until fluffy). Then you will be adding in your Masa flour, baking powder, cumin powder, salt oregano, and black pepper. You will slowly mix in more broth and make it into a soft dough. 

5. Now comes the assembling part, in which you will need to take the corn husk, lay out one scoop of dough, and press it well, and then on that you will add in your chili filling. fold it properly and then you will be steaming them in your steamer in an upright position so that the filling doesn’t fall out through one end. Serve it warm once properly cooked, and it’s all ready.
