Adobong Pusit: A Short History Behind This Popular Dish

Ingredients:
● 2 pieces of Tomatoes
● Half cup of Soy Sauce
● A cup of Water
● 2.5 lb medium sized Squid for Adobong Pusit
● 2 tablespoons of Cooking Oil
● 5 to 6 crushed Garlic Cloves
● 1 big Onion
● Half cup of Vinegar
● 1 teaspoon of Granulated White Sugar
How To Cook Adobong Pusit? A Step-by-step Guide Only For You
Step 1
Firstly, take a large wok and place it over medium heat. You might notice some recipes out there who will suggest you to use a large pan instead. However, we will use a traditional method for this recipe. Heat the wok till there’s no more moisture left in the bottom and surface. When it’s warm enough, pour some water.
Step 2
Start to add Soya Sauce and Vinegar into the water, which are two taste ingredients of the Adobong Pusit Recipe. Slightly stir the entire thing and start to cook it on medium heat. After 3 to 4 minutes, this will come to a boiling point. When it happens, please turn the heat down a bit and then, add the whole Squid into the wok.
Step 3
Next, wait till the liquid starts to boil again. It would not take more than 5 minutes for this to happen. Simmer for at least 6 minutes and then, bring the heat down to zero. Make sure there’s no more flame first, and then, remove the squid with a big spoon. Extract it from the liquid in the wok and keep it on a seperate bowl to use it later.
Step 4
Take a separate wok or large pot to sauté some ingredients of the Adobong Pusit. Place it on top of the heat and pour some oil into the smaller pan. Wait for 2 to 3 minutes, and when the oil is hot enough, start to pour the pieces of tomato. Include the garlic cloves, pieces of onions and sauté these ingredients in the smaller pan.
Step 5
Once these pieces are brownish or red enough, you will know that the sauté is now complete. After it happens, turn the heat down to a medium setting and stir the sauté ingredients first. Next, put the squid back into the smaller pot and start to cook it again. Keep cooking this for 15 to 20 seconds at least.
Step 6
After that, with a ladle, transfer the soy sauce and Vinegar mixture that you cooked before this. Scrape from the bottom to ensure no sauté remnants are stuck there. Increase the heat back to medium high, when it starts to boil, turn it down. Let the Adobong Pusit sauce simmer for at least 3 to 4 minutes.
Step 7
Next, add ground black pepper and salt by sprinkling them from above. Add the ink into the wok and give the sauce one final stir with a wooden spoon. Let the sauce simmer for some time till it reaches the desired consistency. Turn the heat off, and let it cool for 5 minutes. Serve the Adobong Pusit in serving bowls.
