● Gazpacho, Gaspacho or the Andalusian Gaspacho is actually a cold soup that comes from Spain.

● This is a cold soup full of tomatoes, veggies, garlic and vinegar that’s mainly eaten by people from Spain and Portugal.

● Although this recipe dates back to the Iberian Peninsula, this dish is often eaten by the humble shepherds and peasants in Spain. It is a sign of being down to Earth.

● In modern times, chefs often modify the Gazpacho to make it spicier or add slices of pork in some areas. However, we have kept our recipe authentic.

With the amount of ingredients we have provided here, this appetizer will be enough for 6 servings. You can serve this as a soup with fried croutons on top for a fuller lunch.

Ingredients:

● 5 to 6 slices of stale Artisan Bread

● 1 chopped fresh Celery Stick

● 1/2 peeled and chopped Cucumber

● 2 tablespoons Extra Virgin Olive Oil

● 5 large ripe Roma Tomatoes for the Gazpacho

● 2 teaspoons of Cumin

● 2 finely chopped Green Onions

● 2 to 3 peeled Garlic Cloves

● A cored and seeded Green Pepper

● Handful of fresh Cilantro Leaves

● 2 tablespoon of Sherry Vinegar

● 1/2 teaspoon Cayenne Pepper

● Chopped fresh Mint Leaves

● A pinch of White Sugar

How To Make Authentic Gazpacho? A Step-by-step Guide For You

Step 1

At first, we will have to prepare the bread for the recipe. It would not take much time, especially due to the nature of the bread we have taken. Take a bowl of medium size and pour half cup of warm water into it. Before you do start with preparations, please take extra care and check if the bowl is properly cleaned and washed or not.

Step 2

Pour the warm water out, take an absorbent kitchen cloth and wipe the bowl thoroughly. Now, take almost half a cup of mineral water and pour it into the bowl. Take the stale Artisan Bread for Gazpacho recipe and place the slices in the water in the bowl. Leave this for some minutes and let the bread soak up the water inside them. It will take 3 to 4 minutes.

Step 3

Afterward, ring out any amount of excess water by squeezing the bread with your palms. Keep this aside in a glass bowl. Next, we will prepare the Roma tomatoes. Take a large pot and pour water in it so that the tomatoes are submerged enough. Let the water come to a boil first and then, pour the tomatoes in. Keep them in the boiling water for 1 minute and then take them out.

Step 4

Soon when they start to get cool enough, take a spoon and gently peel off the outer skin. In this way, the Gazpacho will have a smooth experience while having it. Now, let us assemble all the other ingredients for blending them. Take a food processor and start assembling the peeled tomatoes and cucumbers in it. Add the green onions, chopped celery sticks, bell peppers, and garlic.

Step 5

Start the food processor for some seconds and then, top this with the soaked Artisan bread. Take half a spoon of Sherry Vinegar and finally, top this mixture up with half cup or Extra Virgin Olive Oil. Again, keep running the food processor for some seconds, and then, add pepper, cumin, Cayenne Pepper, and a pinch of sugar for balance.

Step 6

Keep blending this Gazpacho till the mixture starts to become thick enough. Now, since we are using this many ingredients, it will get thick very easily. If you think it is getting thicker than you want, pause the blender. Add half a cup of water to the food processor and blend again.

Step 7

Till you are getting the desired texture, keep blending everything in the food processor. Once done, turn it off and carefully transfer this to a large container. Let it cool down for 4 hours in the fridge at least. Transfer to a serving bowl, garnish this with chopped green onions, cilantro leaves and torn mint leaves. Your Gazpacho recipe is finally ready to eat.
