Once done, start by pouring in the Coconut Milk into the saucepan first. Please make sure you are not turning on the heat yet, or the milk can get charred on the bottom quite easily. Pour the entire milk into the pan. Step 2 Take the granulated white sugar and add it into the coconut milk in the saucepan. With a small spoon, pour in the frozen Corn Kernels right into it. Now, start combining these ingredients with an wooden spoon slowly and gradually. Place the pan right over medium heat. Soon, within 4 to 5 minutes, you will start noticing that the mixture is boiling. Step 3 Once it happens, decrease the heat a bit and let this boil gently for another 5 minutes. This time should be adequate for the white sugar crystals to melt and mix thoroughly with Coconut milk. Stir occasionally to avoid additional crumps or lumps in the Maja Blanca. Next, we will have to thicken up the consistency of this liquid. Step 4 Take a small glass bowl and pour mineral water into it. With a spoon, add cornstarch and start giving this a vigorous whisk. Please make sure you are leaving no lumps behind otherwise, there will be inconsistency in the milk. Afterward, pour the cornstarch mixture into the pot. While you are doing this, keep whisking vigorously too. Step 5 For the next 4 to 5 minutes, you will have to keep cooking and stirring at a regular pace. We are trying to make the mixture thick, and for that, we need to lose the excess water inside the mixture. Soon, you will notice the mixture getting thick and consistent like an ultra-smooth paste. Now, we will proceed towards the baking process of our Maja Blanca recipe. Step 6 Consider taking an 8×8 Baking dish and greasing the surface lightly. With a spoon, transfer this thick coconut mixture into the baking dish. To make the upper surface smoother, use a spatula to make the mixture uniform. Once the mixture settles down uniformly, let this cool for some time first. Refrigerate the tray for 1.5 to 2 hours in the freezer. Unless the mixture is not becoming set perfectly, keep it in the fridge. Step 7 Next, take an undressed skillet and place it over medium low heat. Pour the shredded Coconut pieces and toast them till they are becoming slightly brownish in colour. For better results, keep stirring frequently for about 2 to 3 minutes. Soon, you will notice them turning to golden brown.  Step 8 Remove the flakes from the heat completely. Take the Maja Blanca out from the freezer and cut into squares. Serve by sprinkling with coconut flakes on top. For best results, serve this dish while it is still cold.
