Step – 1
Firstly, take a large glass bowl and pour in granulated sugar, canned pumpkin, eggs, vegetable oil and start mixing. For best results, you can use a handheld blender. After sometime, include the pumpkin pie spice, ground cinnamon, and salt. Once you have mixed it properly, top this with Vanilla Extract.
Step – 2
Once you have mixed all these ingredients properly, add Pillsbury gluten free flour to make the Pumpkin Waffles batter. While mixing it, pour in the baking powder as well as the Xanthan Gum into the bowl. You must be careful and look out for unnecessary lumps while mixing these ingredients with the mixer.
Step – 3
Next, to make the batter a bit thicker, we will now pour in the dairy free almond milk or coconut milk. Once you are done mixing it properly, finally the batter is ready. Start heating up your waffle iron now. Before you pour in the mix, carefully read the instructions manual.
Step – 4
Once your waffle iron is fully hot and ready to cook Pumpkin Waffles, spray it with gluten free cooking spray. This step will be necessary every time you make a brand new waffle. Take an ice cream scoop to pour the batter uniformly and cook according to manual.
Step – 5
Take the waffle out carefully with caution since the iron will stay hot for a longer period of time. Serve the warm waffles on a plate and enjoy with honey or a scoop of Vegan ice cream along with it.
