Ingredients for Crockpot Lasagna Soup:

  • 1 packet of lasagna noodles
  • 1 teaspoon kosher salt
  • 2 teaspoons Italian seasoning
  • 1 parmesan cheese
  • 2 garlic cloves, finely chopped
  • 1 small onion, finely diced
  • ½ teaspoon freshly ground black pepper
  • 4 cups chicken broth
  • 1 jar of marinara sauce
  • 1 cup shredded mozzarella cheese
  • ½ cup ricotta cheese
  • Handful of fresh basil leaves
  • 1 packet of Italian sausages

Directions:

Step 1:

Brown the sausage pieces into the pan over medium heat.

Step 2:

Continuously saute the sausages remove the excess grease and add the sausages into the pot.

Step 3:

Add 2 teaspoons of marinara sauce, tomato paste and Italian seasonings per taste into the pot.

Step 4:

Add chicken broth into the mixture and add 1 teaspoon of minced garlic into the crock pot. Stir the mixture continuously.

Step 5:

Place the lid over the crock pot and cook on low heat for 4-5 hours. Stir fry every 5 minutes so that the mix doesn’t get stuck in the pot.

Step 6:

Remove the lid add lasagna noodles in bite-size portions and stir fry them in the crock pot. Cook the noodles in the mixture for about 30 minutes.

Step 7:

Add freshly chopped basil leaves over the top of soup while serving

Step 8:

For an extra taste, add a small bite-sized piece of ricotta cheese and shredded mozzarella to the soup. Sprinkle parmesan cheese and enjoy your healthy delight!
