Instructions

Step 1: Cook the Ravioli
Take a large pot and fill it with water. Add salt to the same and bring it to a boil. Empty the ravioli and cook it according to the package until al dente. Drain it all and set aside.

Step 2: Preparing the pancetta or bacon
Take a skillet and heat olive oil over medium heat. Now add the diced pancetta or bacon and cook it until crispy. This usually takes about 5 minutes or so. In order to drain excess grease, set it aside on a paper towel.

Step 3: Make the Carbonara Sauce
Take a mixing bowl and add the separated egg yolks to it. Add heavy cream and grated parmesan and whisk it all together. Add a pinch of salt to the same and enough of freshly ground pepper to have that authentic carbonara taste.

Step 4: Combine it All
Put the skillet back on low heat and pour in the sauce. In order to orevent curdling, keep stirring at a continuous pace.
