The crunchy and crispy layer outside with the tasty potato filling inside is the best thing about this dish. Every ingredient we have used is authentic, including the traditional kadai and Besan. If its raining outside, you don’t want to work hard, but, you got to satisfy the cravings, these deep fried potato balls are the best. Made from scratch, this recipe is every mother’s favorite one for making appetizers her family.

Ingredients We Need For This:

4 to 5 medium sized Potatoes, that need to be peeled and chopped accordingly 

2 teaspoons Lemon Juice to add a tangy taste to the recipe

3 tablespoons Cilantro, to add a slight aroma to the Batata Vada

1 teaspoon Ginger, which needs to be freshly grated

2 Green Chillies, that need to be fresh and small

1.5 tablespoon oil for basic tempering

A pinch of Asafoetida to enhance aroma of the Batata Vada filling

Half teaspoon of Mustard Seeds and Cumin Seeds for adding spice to the dish

Half teaspoon Turmeric Powder to introduce a golden colour

10 Curry Leaves, which is also an aromatic agent for the potato filling

Half teaspoon Salt, or you can add it according to your taste 

1/3 cup Rice Flour which makes the outer layer of Batata Vada crispier

1 cup of Chickpea Flour Besan, to hold the recipe together by binding the potato or batata

How To Make Batata Vada Crispy? A Step-by-step Recipe For You 

Firstly, cut the potatoes into 1.5 inch cubes and wash carefully to remove the starch. Take a big pot and pour water in it; start to boil the water without adding any salt. As soon as it starts boiling, pour in the potatoes and boil for 16 to 18 minutes. Once they become tender enough, kill the heat and drain excess water from the pot. 

Now, we will prepare the tempering of Batata Vada; on a medium frying pan, pour in oil of your choice. Please make sure you are keeping the flame at a medium heat. Once the oil gets heated, add the mustard seeds first. Afterwards, add the cumin seeds and start frying both of them. Keep frying until the seeds start to fly away from the oil. Once done, add chana daal and chopped ginger.

Sauté the whole thing for at least 2 minutes and then, add green chillies, turmeric, curry leaves. Top the entire mix with a pinch of Asafoetida to enhance the aroma of your Batata Vada recipe. Add this tempering oil mix to the potatoes and season with lemon juice, cilantro and salt. Roll it up into balls. After that, start mixing Besan, spices and rice flour.

Make the batter into a thick texture and add water occassionally; keep whisking until you are reaching a pancake-like consistency. On the other hand, heat oil in a frying pan. Finally, start dipping the potato balls into the Batata Vada recipe batter and fry in the kadai. Once done, soak the excess oil in a paper towel lined basket and serve them.
