Before we jump into the recipe, letโ€™s take a quick look at the history of the dish:

  • Origin of Chicken 65: Chicken 65 is special preparation from the Chennai city of India and it was founded in the year 1965. It was created by Buhari Hotel where Indian spices where used to cook fried chicken.
  • Why “65”: Many misleading are associated with the number 65 at chicken 65. Some feel that it is the 65-day-old chickens used for this recipe while others say โ€™65 spicesโ€™ is used to refer to an imaginary 65-cheap spices.
  • Fusion Biryani:  As the years passed by more innovation was done on the food by adding Chicken 65 to biryani and this provided two famous Indian foods.

Now, letโ€™s get cooking Chicken 65 Biryani!

Ingredients for Chicken 65 Biryani

For Chicken 65:                               

  • 500g boneless chicken
  • 2 tbsp cornflour
  • 1 tbsp rice flour
  • 1 tbsp ginger-garlic paste
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • 1 tsp turmeric powder
  • 1 tbsp lemon juice
  • 1 egg (optional)
  • Salt, to taste
  • Oil, for deep frying

For Biryani:

  • 2 cups basmati rice
  • 1 large onion, thinly sliced
  • 2 tomatoes, finely chopped
  • 1 cup yogurt
  • 1 tsp cumin seeds
  • 2 bay leaves
  • 4 cloves
  • 2 cardamom pods
  • 1 cinnamon stick
  • 1 tsp red chili powder
  • 1 tsp biryani masala
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 3 tbsp oil/ghee
  • Fresh coriander leaves, for garnish
  • Salt, to taste

Step-by-Step Chicken 65 Biryani Recipe

Step 1: Marinate the Chicken

  • In a bowl combine cornflour, rice flour, ginger garlic paste, red chilly powder, garam masala, turmeric powder, lemon juice, egg (optional) and salt.
  • Combine the chicken pieces and make sure they are well coated before marinating for atleast 30minutes.

Step 2: Prepare Chicken 65

  • Use heat oil in a pan for deep frier.
  • Cook all the marinated chickens until on the surface they turn out to be of golden and crispy texture. Set aside.

Step 3: Cook the Rice

  • Rinse the basmati rice under cold and warm water for about 20 minutes.
  • Place water with a pinch of salt in a big pot and put soaked rice into it boiling. Leave to cook until it is about three-quarters done; the grains should be more than half al dente.
  • Empty the rice and place it in another container.

Step 4: Prepare the Biryani Base

  • In another pan heat oil/ghee Take a separate pan for heat oil/ghee Stir in cumin seeds and add bay leaves, cloves, cardamoms and cinnamon, and sautรฉ until fragrant.
  • As it reach medium heat add the sliced onions and fry until golden brown.
  • Add tomatoes now and sautรฉ the mixture, add red chili powder, biryani masala, turmeric powder, coriander powder. Simmer for sometime next allow the tomatoes to soften and the masala to release the right aroma.
  • Now add the yogurt and mix well to get a nice, rich gravy.

Step 5: Layer the Biryani

  • Downing the gravy in the same pan, scatter half portion of the semi-cooked rice on the gravy.
  • Put fried Chicken 65 pieces as an upper layer.
  •  Place the remaining rice over the chicken.
  • Stir and place the lid on, cook on low/.heat for 15-20 minutes so that all the ingredients infused properly.

Step 6: Garnish and Serve

  • This recipe should be served hot accompanied by fresh coriander leaves and fried onions.
  • Enjoy steaming hot accompanise with raita or any side dish of your preference.
